1. Kale Waldorf Salad - loosely adapted from here

2. Lavender Almond Cake - from here

3. Green Smoothie - no recipe - I just blend about 2 c. spinach, 2/3 c. almond milk, 1 banana, a handful of frozen strawberries, 1 tbsp. peanut butter, a sprinkle of chia seeds, and a dash or two of cocoa powder

4. Chana Masala - inspired by my dear sister-in-law - from here, served over baked sweet potato

5. Chocolate Avocado Cupcakes - from here - there are a couple of holes in the recipe, so here's what I did to fill them: bake at 350 degrees for 15-18 minutes - makes 12

I wonder why I am so very hungry right now.... Have a lovely weekend (the first photo is what I want to eat right now!)
ReplyDeleteI made chocolate avocado cupcakes once. They were delicious, but the avocado frosting was NOT. But the person I made them for--it was his birthday--liked them a lot, so I guess that's all that matters.
ReplyDeleteAnd that lavender almond cake has me drooling.
Yum!
ReplyDeleteThat chana masala looks incredible, but so does the rest of it. :)
ReplyDeleteOh. Kale Salad is my fave!
ReplyDeleteNever had avocado in cupcakes, but I see how it could work...fluffs everything up...
XO
Beautiful pictures! That all looks so good :) Thanks for your comment on my blog. Love from your newest follower! xo, eliza
ReplyDeleteThanks for your kind words, everyone! xox
ReplyDeleteJenica, I had a similarly bad experience when I tried making chocolate avocado pudding - it was really pretty gross. These were great, though! Not too sweet, which was nice!
Eliza, thanks for saying hi! I'm so happy you stopped by! :)
Love this. I am so uninspired to cook...if I won a lottery the first thing I'd do is hire a personal chef! This is all so appealing and colourful.
ReplyDeleteNothing wrong with that! :) Thanks for your kind words!
DeleteYum! Just noticed your picture....niiiiice! Xoxoxo to you all, and right smack dab on the lips of Claude, Wilbur, and Lou!!!
ReplyDeleteThanks! :) I'm not sure Wilbur will let me get that close to him, but I'll have to see whether I can sneak one in on him!
