-:- from our kitchen lately






1. Kale Waldorf Salad - loosely adapted from here

2. Lavender Almond Cake - from here
-:-
3. Green Smoothie - no recipe - I just blend about 2 c. spinach, 2/3 c. almond milk, 1 banana, a handful of frozen strawberries, 1 tbsp. peanut butter, a sprinkle of chia seeds, and a dash or two of cocoa powder

4. Chana Masala - inspired by my dear sister-in-law - from here, served over baked sweet potato

5. Chocolate Avocado Cupcakes - from here - there are a couple of holes in the recipe, so here's what I did to fill them: bake at 350 degrees for 15-18 minutes - makes 12

    I made chocolate avocado cupcakes once. They were delicious, but the avocado frosting was NOT. But the person I made them for--it was his birthday--liked them a lot, so I guess that's all that matters.

    And that lavender almond cake has me drooling.

    Jenica, I had a similarly bad experience when I tried making chocolate avocado pudding - it was really pretty gross. These were great, though! Not too sweet, which was nice!
